It’s Time for a Fluid Pudding Eggsamination!

This is a compensated review by BlogHer and Eggland’s Best.

A few days before Christmas, the kind folks at BlogHer asked if I would be interested in reviewing Eggland’s Best eggs. And that was funny (to me, at least), because I had JUST finished grocery shopping for the ingredients to make my Christmas Egg Casserole. In other words, I was already inadvertently working on the review! Eggcellent! (Get it?!) ((I know you get it.))

For this review, I agreed to prepare three egg recipes. As I mentioned earlier, my first choice was the Christmas Egg Casserole. Because I love to support fellow bloggers and their publishing efforts, my second choice was Stephanie O’Dea’s Mexican Breakfast Casserole (as published in her book “Make it Fast, Cook it Slow”). My third choice? The easiest (and possibly tastiest) egg sandwich you’ll ever make—the Egglish Muffin Sandwich! (I just made that name up! It’s catchy! Kind of!)

Every year on Christmas morning I make the Christmas Egg Casserole, and every year my parents and in-laws go nuts over it. As you can see, the recipe showcases a dozen eggs, along with cheese, milk, and sausage. (The complete recipe may be found here.) I serve the casserole with a side of my mom’s fruit salad and a bit of Apple Cranberry French Toast. It’s my Christmas hat trick, and although I stand firm against the use of the word Scrumptious, well, it’s mighty scrumptious. Mighty scrumptious, indeed.

A few weeks ago I purchased a copy of “Make it Fast, Cook it Slow” and it is changing my life. Last month I owned one dusty Crock Pot. Today I own three sparkly new ones—all of which have been used in the past week. When I saw the recipe for Mexican Breakfast Casserole, I knew I had to try it. (To me, Eggs in a Crock Pot sort of rivals Snakes on a Plane. Terrifying.) As the photos show, the Mexican Breakfast Casserole is constructed by layering an egg/vegetable/cheese mixture with corn tortillas, and then cooked on low for six to eight hours in a four-quart Crock Pot.

My parents drove through three inches of snow and cold to eat this casserole with me, and when they entered the house, the smell alone made them forget all about the patches of black ice on the highway. With a spoonful of salsa and some sour cream on top, this was one of the greatest Crock Pot concoctions I’ve ever tasted. Eggs in a Crock Pot! Who knew?! (The complete recipe may be found here.)

Egglish Muffin Sandwich

As you may or may not know, I have a love/hate relationship with Weight Watchers. Currently, I’m loving them. And  because I’m once again counting points and focusing on filling foods, I tend to search out low point/high protein solutions. In the world of the Weight Watcher, an egg is two points. And that’s not bad at all. (Be sure to check out Eggland’s pages on Nutritional Benefits and Health and Wellness for additional information.)

Here. Do this:
Place a slice of Canadian bacon in the bottom of a microwaveable measuring cup. Crack an egg on top of it, and bust the yolk. Add salt and pepper if you want. Cover lightly and microwave for 60-90 seconds. Meanwhile, toast an English muffin and place a slice of cheese on one of the halves. When your egg/bacon bell dings, remove it from the microwave, spoon it all out, and place it on the cheese half of the English muffin. Put the other half of the muffin on top, squeeze lightly, and there you go. If you played your cards right with low fat ingredients, you’ve just created a five point sandwich that’s high in protein and calcium. And it’s just as good as anything you might purchase at a fast food dump, if you know what I’m saying.

    I’m going the breakfast burrito route, too! Especially when camping and it ends up as hangover food.

    Although I rarely fix it, custard is my FAVORITE!

    More often than not, my eggs come in the form of fried, over-medium.

    My favorite way to eat eggs are over-medium with toast. Or in huevos rancheros. Definitely not scrambled.

    We eat alot alot of eggs. One of my favorite meals is “Eggs with tortilla on the bottom” or “Huevos Montados”. Basically a sunny side up egg on top of a fried corn tortilla. Its bad for you but just delicous when served with salsa and black beans.

    Deviled eggs are a definite fave around here. Sometimes I make them with curry powder and a dab of chutney on top. Sometimes with bacon and spinach in the filling mix. Always very yummy!

    Hard boiled and in a salad. Do you know the magical way to hard boil eggs? I do. I did not always but I learned it recently and it IS magical. They are done perfectly every time – cooked all the way through but not overcooked to where you get that awful grey layer around the yolk. (Grey eggs = no thank you.)

    Here is what you do. Put your eggs in water just enough to cover and bring to a boil. As soon as they boil turn them off, put a lid on it, and just leave them alone in there for 20 minutes. I know, it seems like a long time, but really, is 20 minutes so very long to wait for magic? I think not.

    After 20 minutes pour out the hot water and fill the pan with cold to stop the cooking. Voila! Perfectly hard boiled eggs.

    I’m currently on a scrambled egg kick. And I prefer not to mix up the eggs before I pour them in the pan; I just melt the butter and crack the eggs in the pan and let them fry justalittlebit and then I scramble them. You get a little differentiation between the yellow and white parts that way.
    And yes, I let my kids eat raw cooky dough – damn the raw eggs, full speed ahead!

    My husband makes the greatest egg sammich. I can never manage to duplicate the deliciousness, no matter how much hot sauce I dump on.

    I am currently pregnant (12 weeks), and I crave eggs all day long. I love egg breakfast casserole, and since it’s easy to re-heat at work, I have been making one every Sunday for the past few weeks and bringing hunks of it with me to eat throughout the day.

    I also love quiche! So I’ll go with breakfast casserole and quiche. Oh! And also scrambled. And at restaurants I love vegetarian omelettes. Did I mention the cravings? Six months of free eggs would be lovely right now!

    strata is our Christmas tradition – it’s your christmas egg casserole with bread in it. I love flan or custard. and breakfast sandwiches with ham/cheese/scrambled eggs are great. (and egglands best are my favorites, when I’m not buying eggs at the local farmers market.)

    As a rule I don’t eat eggs as eggs. I make a mean omlete for my husband and I love to cook with them though. If only I had more people to feed the Christmas egg casserole looks like it would be a hit.

    Egg sandwich with sausage and fake cheese on an English muffin. It’s the only way to eat eggs. And really the only way to eat fake cheese. I’m talkin American slices. So gooey and delicious. And so fake.

    Deviled eggs. Hard boiled with a sprinkle of salt. Scrambled hard. Simple egg salad with just mayonnaise on soft bread.

    Easy – basil cream cheese eggs (okay, that’s more of a descriptor than a name). My sister had these somewhere and we reverse engineered them:

    Beat eggs, then mix with pats of cream cheese. The ratio is pretty loose, but use full fat cream cheese because the low fat kind melts weird. I’d say I use about the amount of cream cheese that would generously cover one bagel per 3-4 eggs. Also chiffonade some basil and stir that in. I like a lot, but I’d say at least 5-6 large leaves per 3-4 eggs. Scramble the eggs per your preference (I like to scramble them over slightly higher heat for the “large curd” variety, but you can do the low and slow with lots of stirring method, too). S&P to taste. Also, butter and grill a couple of good bagels. We like plain or everything bagels with this. Serve the eggs over the bagels. Delicious!

    One caveat: melted cream cheese can be mistaken for uncooked eggs, so keep an eye on what you’re doing, and don’t overcook the eggs thinking they are still raw when it’s just the cream cheese.

    My VERY favorite way to use eggs is for meringue on top of pies. 5 egg whites, cream of tartar, a small amount of sugar (I have also used Splenda and it is great for those who are avoiding sugar), put into a mixer and beaten until they are at the “stiff peaks”stage and you have beautiful meringue!

    I also use eggs for making omelets for my hubby on the weekends. His favorite would be the Denver or something with a bunch of veggie’s and some type of protein.

    I am also usually asked to make deviled eggs when I help out at church with catering a funeral luncheon.

    On average, we go through at least 4 dozen eggs per month.

    My favorite way to eat eggs is either scrambled or poached and served over a nice thick slab of polenta. Top with fresh salsa and a little sour cream and you have a yummy breakfast or dinner.

    Love eggs! I’m on weight watchers (hate it, but it works) and tend to eat a lot of hard boiled egg whites for a high protein- low fat option. Better, though are scrambled eggs with dill and bacon. Yum!

    We LOVE eggs in our home. Cheap, healthy protein! Our favorite is scrambled, with a good dollop of sour cream whipped in and fresh chives sprinkled on top. Heaven.

    I love chillaquiles: Mexican-style eggs with salsa and cheese and corn tortilla strips mixed in. Yum, yum, yum!
    Also, I totally eat cookie dough even if it has raw eggs in it! I don’t have kids yet, so I’m not sure if I’ll let them do the same.

    I absolutely love “Creamed Eggs on Toast”….I don’t know if the recipe can be found online, but it is hard boiled eggs, sliced and mixed into a white cream sauce and served over toast. YUM, YUM! Even my very picky husband devours it!

    My favorite egg recipe is DEFINITELY the casserole! I make a similar one on Christmas morning and really should make it more often. It’s so easy! (Though, I’ll be trying your recipe next – looks “scrumptious!”)

    We eat a TON of eggs at our house- burritos, cheesy scrambled eggs, quiches, toad in the hole (holla!)…eggs are kind of our go to easy meal. And they are affordable- I can buy a dozen organic eggs and still be saving money compared to buying just one lb. of ground beef.

    We do Breakfast Burritos, Omelets, and Egg Sandwiches — with a runny yellow so it makes a mess while you eat it.

    I am a recent convert to fried eggs. I used to only eat eggs if they were scrambled (or omelets). Basically, if they looked like eggs I was against them. But now I eat silly amounts of fried eggs! I dip toast in them, have them with spinach, tomatoes, on toast, on sandwiches, huevos rancheros, any way I can get them I love them!

    My French grandmother used to make the best scrambled eggs on the planet. I have learned that it is because she put copious amounts of butter in them. Butter, eggs and a little bit of sopping toast.

    I’m a fan of the egg! I also feel healthy and holier than thou when I buy EB’s. I’m currently feeding my kids lot’s of quiche, because it’s easy and they think it’s pie. :)

    Eggs are the best, quick, go-to protein. Eat only the white and they are very low calorie/fat. I have them on hand all the time and make them hard boiled, swirled into brown rice w/hot sauce (my own fried rice recipe), and poached. My mo-in-law gave me a wonderful old italian recipe for chicken soup w/escarole or spinach and egg dropped in for extra interest. Hubby and daughter eat it too, so bonus! love,love,love eggs.

    We eat a lot of eggs at my house. Current favorite is similar to your Egg Muffin, but cooked in a skillet, with yummy, yummy butter. Egg over easy so the yolk drips down your wrist while you eat. **drool**

    We go through a lot of eggs here, as I try to protein up my boys before I send them to school. IMHO that’s much nicer to the teacher than hopping them up on Frosted Flakes.

    My ever-loving favorite remains egg salad sandwich, on 12-grain bread, with no crusts. YUM

    Moonstruck Eggs! If you’ve ever seen the movie “Moonstruck”, you might remember the mom (played by Olympia Dukakis) made the eggs this way.

    Recipe:

    Take some good Italian bread, make a hole in the middle.

    Pour a little olive oil in a pan and brown one side of bread, flip it over when browned, crack your eggs in it, and cook them sunnyside up.

    In the movie they had red peppers on the side.

    I am an egg nut. I’ll eat eggs any way but raw. Scrambled on toast = yum. Eggs on toast or bagel or croissant = yum. Casseroles are yum. You get it, I like eggs. Pick me random picker thing!

    Oh, I do love a good deviled egg. Although a friend introduced me to a similar (and delicious) breakfast sandwich. Spread cream cheese on a toasted English muffin and top with a fried egg and bacon. YUMMY.

    I prefer my eggs over easy, and with buttered and jammed toast alongside. But JB loves scrambled, so that’s the way we eat them most often.

    We’ve been sick since Christmas, and bland/easy on the stomach foods are winning out, so we’ve gone thru a few dozen. It’s an eggapallooza around here.

    I’ve recently discovered that you can bake eggs! Spray a muffin tin with butter flavored non-stick spray and crack your egg (or two, or three) into the muffin cup(s). Sprinkle the top of the eggs with seasoning salt and a little shredded cheese. Bake at 300 for about 25 minutes! So easy and actually good for you too!

    I love poached eggs on a bed of sauteed spinach (with garlic!), or in a pool of spicy greek yogurt. Unless I’m in Austin, and then it’s breafast tacos all the way!!

    I love an egg sandwich recipe that my husband brought home from work. Toast two pieces of bread, any kind. Spread grape jelly on one piece, put one slice american cheese and one or two slices of ham on the other. Fry up an egg, and place it on the ham/cheese/toast, top with the other piece of toast, and voila! It may not sound tasty, but it is!

    We saw an easy microwave scrambled egg in a mug recipe from the Missouri Egg Board/Council that my son makes all the time. It’s so much easier than getting out a pan and cleaner, too.

    My husband made a quiche when we were dating that is so so wonderful. Not at all weight watcher friendly though. It is made with bisquick and eggs and cheese and butter and bacon. Ya, I know, Dr. Atkins would love it.

    I love eggs, but not at restaurants. They cook them too hard or in bacon grease or both. I like scrambled eggs cooked in butter, slowly, so they’re soft, kind of sloppy. And quiche and egg salad and all the good things. I also make a blender of ramos fizzes on Christmas morning that include gin and raw eggs and cream and sugar. (If you buy pasteurized eggs, you can eat them raw.)

    I’m not much of a cook but I can make a killer sausage biscuits with gravy. If you throw an over easy egg on the top of that mess it is one of the tastiest things you’ll ever eat.

    Wow, six months worth of eggs is, for me…one dozen eggs. Well, you have to buy them buy the dozen, so I eat about 6 and toss the other 6 when they turn to glue. Eggs last a long time!

    I make a tortilla espanola that is pretty good. About once every six months.

    #1. My mom made us olive-and-egg sandwiches when we were little. Try it! Use a little can of chopped olives and mix it into your cooked, chopped egg mixture.
    #2. Scrambled.

    The casseroles look great. My grandmother makes a “breakfast quiche” at Easter that’s in the same vein as the Mexican Breakfast Casserole but with white bread rather than corn tortillas- and now you have me wondering if it could be made in the crockpot. It would probably be an easy conversion.

    I do, in fact, live dangerously and let the kids eat cookie dough with raw eggs in it. Knock on wood, no one has caught salmonella. I also love egg breakfast sandwiches and will be making the english muffin recipe.

    I ate enough raw cookie dough as a teenager–OK, who am I kidding, last week–to be a walking case of salmonella. Oh, well.

    My favorite egg recipe is simple scrambled eggs with some garlic powder, salt, pepper, sliced grape tomatoes and sauteed spinach. I eat this almost every morning. Dee lish and simple.

    My other favorite egg recipe is my grandmother’s “secret” deviled eggs. She later confessed that there’s no secret in the recipe, she just wanted people to think she was cool for having a secret recipe.

    I love eggs, they’re such an easy protein to add to a meal. Frequently I’ll trhow a fried egg over the top of a dish and call it a day (try it with pasta with tomato sauce – yum). My favorite things to do with eggs though are fry them up and throw them on top of a tater tot skillet (tater tots, sauted with any veggies I can find).

    I also do the egg-casserole for Christmas breakfast! I have no hatrick. I only have 2 things I make, so I don’t know what that’s called.

    Anyway, I’ve tried several casserole recipes but the one we made last month was the biggest hit so far! I’ll link the recipe, but I first have to say that we adapted it to a full casserole and doctored the ingredients a bit. The new aspect of this one was the hashbrown CRUST. Yes! Could anything be better::

    perfectly poached with really really buttery toast. OR scrambled with cheese. My mom used to make us breakfast “shakes” with raw eggs, milk and sugar. we survived.

    I prefer over medium eggs, whites completely cooked and yolk still a little runny, restaurants have no idea how to do this so I only have it at home. I try to convince my boy it is ok for him to eat raw cookie dough but he is a worry wart and certain he will die! (thank you hubby)

    mmm eggs! ok when I was a kid I used to love my dad’s jelly omelets (the only thing he ever cooked) but now I love shirred eggs–so easy! preheat the oven to 300, warm up the ramekins with a pat of butter in each one, throw some fresh herbs in the ramekin and crack one egg over it, then pop it in the oven (all sitting on a cookie sheet) for 8-9 minutes. delish! serve with toast.

    Saute garlic and fresh spinach; add 2 eggs and scramble. Serve with grated Parmasan. If you need this to be an even more protieny meal, add some cottage cheese (of all things) before the eggs. It’s really delicious.

    When I was little my dad would make breakfast burritos for us. Eggs scrambled with bacon and cheese, served up on a flour tortilla. YUM. He’d wrap them up in a paper towel and they’d keep our hands warm as we made our way to the bus stop. (we lived in the middle of no where, the bus stop was about 1/2 mile walk away. those burritos were life savers on cold mornings!)

    I heart eggs. They are the defining ingredient on my favorite burger, in the best colcannon and they are about the only form of protein my 2 year old will eat. I super heart eggs. And yes my daughter eats as much raw cookie dough/pancake batter as she would like.

    This may sound strange…but it is delicious! I just LOVE an Egg Salad Melt. It is actually very simple. It’s the same idea as a tuna melt. You simply make a grilled cheese sandwich with an egg salad filling. Thanks!

    I like my eggs over medium, scrambled with cheese, hard boiled, egg salad, you name it. The only thing I don’t like is when they’re drippy. Ick! Also – raw cookie dough is a gift from the gods. And the chances of getting some foul bug are rather low. Especially if you use local eggs. :)

    After 2 years of “home grown” eggs, we find ourselves having to buy them at the store again. Now the lovingly nicknamed “Last Chicken Standing” has started laying again and gave us a beautiful brown egg the other day. She’s hen-credible!
    We eat eggs any way we can get them: fried, scrambled, poached, hard-boiled…love them.

    I like what we called bird’s nest as kids, and my daughter has named eggs and bread. Cut a hole in the center of a piece of bread, melt a little butter in your pan, put the bread in the pan and break an egg in the hole. Cook to the level of yolk doneness you like. It’s particularly good with a little maple syrup. Of course, when we were little we would beg my mom for mini-marshmallows for “bird’s eggs” and she would let us have them. Now it sounds totally gross.

    I have been craving eggs something fierce lately, I think Easter needs to come early this year. I love ‘em all sorts of ways – scrambled, fried, veggie omeletized, in casseroles with potatoes. My husband loves his egg sandwiches – basically a fried egg on toast. Mid-winter when I stop caring about calories and just want to be warm (about now) I like to make a breakfast polenta with an egg cooked in it, and grated parmesan on top. Mmmm… off to the kitchen!

    I all the things you posted. AND we use EB eggs every week! Eggs and …?…remain our back-up dinner for any weeknight that goes haywire as they’re inexpensive, protein-filled, kid-approved & on the table in 10 mins or less. Hurrah!

    also on weight watchers and loving eggs! for some reason i love egg salad these days, use one HB egg and one HB egg white, its the perfect amount for one sandwich. a little lf mayo, mustard, salt, pepper, dill, YUM.

    French toast, omelettes, egg sandwiches, strata. Strangely, I didn’t like eggs when I was a child – but I’ve made up for it as an adult. Also – SO SATISFYING – never hungry before lunch if I have some eggy goodness for breakfast.
    Also – EB are very good eggs and we would EAT THEM UP!

    huevos rancheros would be number one but my fall back is a simple fried egg sandwich with mayo and tomato. I prefer fried but when I’m making breakfast for the family I just do a big batch of scrambled. And yes, me and my younguns eat batter and dough raw with eggs. As a kid I would eat soft boiled eggs with strips of toast to dip in the yoke. yum

    My favorite may be deviled eggs. Second favorite are my perfectly fried over-medium eggs. Third favorite are poached. My sons like eggs scrambled with sauteed onions. We eat eggs every day, as the Daddy is vegetarian and eggs are kind of our ‘meat’. We must go through 2 dozen a week, at least, for the 4 of us. I use double the amount called for in waffles, crepes, pancakes.

    We are making a yummy egg salad for lunch – with lettuce and bacon slices on whole wheat. With a little bit of honey mustard dressing on the bread. SO GOOD!

    Eggs… Yummy. Raw eggs in cookie dough? Not nearly scary enough to keep me from eating it (or letting my kids have a bite or two). Personal preference? Spinach, mushroom and cheese omelet or over easy with toast to dip in the yolk.

    I love eggs in all ways, shapes and forms — especially quiches and breakfast casseroles and souffles. But I guess my favorite is a sandwich of an over-easy egg on toast with a thin scraping of mayo, a VERY thin piece of swiss cheese and a sprinkle of garlic powder, where one has to bend over the plate as the golden yolk runs all over the place. Mmmmmm…
