There are more than 100 ways to eat Pop-Tarts!

This is a compensated review by BlogHer and Kellogg’s® Pop-Tarts® Toaster Pastries.

Every year for Easter, we invite both sets of grandparents over to our house for lunch. For the past several years I’ve done that thing where you pat down a big goofy ham with brown sugar, balance a bunch of pineapple slices on top of the ham, and then pierce cherries with toothpicks in the center of each pineapple ring so the rings don’t slide off when you put the thing in the oven. The fruit-festooned ham always sets off a bunch of Oohs and Ahhs when it comes out of the oven, making the entire process sort of worthwhile.

On the side of our ham, we tend to go with the green bean casserole with crunchy dried onions on the top, and the hash brown casserole that’s loaded with cheese and, if my memory serves me correctly, Corn Flakes. (Our side dishes lack creativity, but never fail to please.)

Dessert is where we have our issues. I have been completely unsuccessful when it comes to making a dessert that EVERYONE in the house will eat. Jeff and the kids won’t do fruity pies. I’m not a fan of goopy chocolate desserts. Raisins (and Mariah Carey CDs) aren’t allowed in my house. We’re a tough crowd.

Last week BlogHer and Pop-Tarts asked if I would be willing to try out the Kellogg’s recipe for Sprinkly Ice Cream Bites.

Not only was I willing to try the recipe, I was willing to take photos of the entire process so you can make them, too!

(You might want to grab some tissues. This won’t make you cry, but it might make your mouth water.)

Okay. You start off with a box of Pop-Tarts (we used the Strawberry Milkshake flavor), some sprinkles, and your favorite ice cream (the girls always go for the ice cream that looks like a party’s about to bust loose).

Ingredients

Take two (or four, or six, etc.) Pop-Tarts, and cut them into fourths.

Rectangles

Take roughly a cup of ice cream and (quickly! very quickly! because ice cream melts!) spoon a generous dollop of it onto the unfrosted side of half of the Pop-Tarts rectangles. Then, quickly (I can’t stress how quickly you need to move) cover the ice cream rectangles with the remaining rectangles—frosting side up.

Loaded

Pour a bunch of sprinkles into a bowl, and roll the edges of your Pop-Tarts sandwiches into the sprinkles.

Sprinkled

Wrap each sandwich fairly tightly in plastic wrap, and place them in the freezer for a few hours to harden up. (Full disclosure: It was really hot in my house while we were making these, and the ice cream we chose was super-soft. I don’t mean to stress you out with all of the “Quickly! Quickly!” jazz. I just want you to get a feel for the frantic vibe we were experiencing while constructing our sandwiches. Obviously, you can avoid the stress by going with hard ice cream.)

We left our sandwiches in the freezer for about 90 minutes before the kids simply couldn’t wait any longer.

High praise. AND, I’m happy to announce that we have found our Easter dessert! (We’re toying with the idea of mint chocolate chip ice cream in Chocolate Fudge Pop-Tarts for the adults! Or French vanilla ice cream sandwiched between Brown Sugar Cinnamon Pop-Tarts! Endless options!)

    My cousins invented Oreo balls for Christmas this year. Crush up a bag of Oreos, stir in a block of softened cream cheese, roll into small balls and set on a tray covered in wax paper, refrigerate, then try not to eat the whole batch at once.

    Snickers pie! On Oreo cookie crust, layer vanilla ice cream, chopped snickers, chocolate and caramel syrups, repeat. Delicious!

    Florence cake is a favorite dessert around here. It’s something my MIL came up with & named after her youngest daughter. Take a pie crust, spread an all fruit jam (I use a mixed fruit) on the bottom and sides of crust. Pour 1/2 a box cake mix in & bake per instructions on the box. Ice with tinted powder sugar icing. Really good with raspberry jam & chocolate cake mix!

    The VERY FAVORITE dessert in our family is homemade chocolate meringue pie or lemon meringue pie. Any pie, especially with meringue is a crowd pleaser.
    -Pie Crust (pre-baked)
    -Pudding of your choice (cook and serve)
    1. Once the pie crust has completely cooled, make the pudding and put immediately into pre-baked pie crust.
    2. Cover with meringue (see recipe below)
    3. Bake at 375 degrees until meringue is golden brown.
    4. Refridgerate for at least 2 hours.
    5. SERVE!

    Meringue-
    5 egg whites
    Sugar-(several Tablespoons full)
    1/2 tsp. cream of tartar

    Make sure your mixing bowl is extremely clean and dry.
    ~ Add egg whites to mixing bowl, beat on high until the eggs get foamy looking.
    ~Add cream of tartar.
    ~Add sugar one Tablespoon full at a time, using about 5 Tablespoon fulls total.
    ~Keeping beating on high for a few minutes until the whites become stiff peaks.

    Spoon onto filled pie crust, making sure to bring the meringue to cover the edges of the pie, otherwise it will shrink when you bake it.

    The other family favorite that I make every Mother’s Day and Fourth of July is homemade vanilla ice cream with strawberry compote.

    Believe it or not – right now we are all about the berries at our house. (we are also all about the girl scout cookies). I feel sort of hilariously fiendish when I say “Oh, you want berries? WELLL, that’s a special treat, but . . . . .okay, I guess we can have berries for a bedtime snack.” or when I just wash up some berries, and put them in bowls, and then enjoy the blaze of affection and excitement when I yell “Who wants berries” and they all go crackers, “me, me, I do, I do.” To really fancy it up, we add ReddiWhip. (By the way – if you have not introduced your kids to ReddiWhip – do it just for fun – their amazement is completely endearing).
    But this pop tart thing looks like a LOT of fun – and I come from a long line of ice cream lovers. We will have to give this a try!

    Our family favorite isn’t very unique, but it’s always a win: brownie sundae. Yep, brownies and vanilla ice cream – we’re easy to please.

    I picked this one up as a reporter after covering a small town city council meeting. After the meeting, a city staff member served this pie she made and served to everyone (including me).
    Prepare a box or two of any flavor Jello (I like it with cherry) and pour it into a graham-cracker crust. Then add a can of fruit cocktail. After refrigerating until set, top with Cool Whip and serve. Quick, easy and good.

    My favorite family friendly dessert is usually dump cake…you grease a 9×13 dish, pour in a can of crushed pineapple, pour in a can of cherry pie filling (which i don’t even like and only eat in this dessert), pour over a box of yellow cake mix, top with some chopped pecans and pour a melted stick of butter over it. It is delicious.

    What is always a big hit in our family is either scotcheroos (sort of rice crispie treat, but with peanut butter instead of marshmallows and a coating on top of chocolate and butterscotch, kind of messy but not a gooey dessert) or pumpkin bread with cream cheese icing. Both started out a Christmas treat, but my mom now makes at every holiday gathering, otherwise….the natives get a little restless. Both are also amazingly good. Let me know if either sounds like a recipe you’d like to try. :)

    my kids love to get creative- but they love brownies all the time but make sweetened popcorn- cheese popcorn- depends on mood. I have gotten them though to the point where they don’t need desert because they are too full- yeh me-

    our favorite is homemade thick peanut butter milkshakes like the drive thru old timey curb service restaraunts use to make. for 1 serving mix 1 1/2 cups Vanilla Ice Cream/1/4 cup Smooth Peanut Butter/1 teaspoon vanilla flavoring/1/4 cup whole milk mix in blender then serve in pre chilled freezer glass soda cups with a straw yum!

    I like to put a slight twist on S’mores and trade out the Hershey’s chocolate bars and instead SLATHER the graham crackers with Nutella before sandwiching in the toasted marshmallow.

    I keep a bunch already cut in the freezer. Just microwave until warm, put a generous scoop of vanilla ice cream on it and top it off with hot fudge sauce. It’s easy and always something I have on hand for unexpected guests or celebrations!

    Our go-to family dessert is inexplicably called Texas Sheet cake. Texas-sized maybe as it’s made in a jelly roll pan?

    It’s basically 3/4 inch of cake with fudge masquerading as icing.

    My favorite family-friendly dessert idea is brownies made with yogurt (you know, the “no pudge” kind). Not *as* bad for you, although I recently saw a recipe on the Whole Foods site for brownies made with black beans! I am very curious about that one and whether that could really fool anyone!!

    My kids are willing to eat pretty much anything that contains sugar, and I am a fairly adventurous baker, so we are always taste-testing new things. The only thing I don’t really bake is pies – I’m just not that into pie. But cakes, cookies, cupcakes, brownies….it’s all good!

    We used to wrap a marshmallow in a raw pillsbury biscuit, dip the whole thing in melted butter, then roll in cinnamon sugar. Bake for 8-10 minutes. Yum.

    We love “Boy Scout Pudding.” Pistachio pudding, crushed pineapple and Cool Whip. We use the sugar-free pudding, pineapple in its own juice and sugar-free Cool Whip and it’s wonderful and good for you!

    Super easy and super yummy:

    Combine a 16oz jar of peanut butter with one pint of (softened) chocolate ice cream and spread into a graham cracker crust. Put it in the freezer for a few hours to harden. Garnish with chocolate sauce or whipped cream.

    Nutella spread on almost anything (cracker, banana, cookie, bread) makes such a fancy dessert when you’re feeling uninspired. Or if you don’t have anything for dessert and your husband is all needy for chocolate and you find a forgotten (I know!) jar of Nutella in the cupboard.

    Our favorite easy dessert is simple: graham crackers with chocolate frosting spread on them. It has to be ‘real’ frosting, though – not that jar stuff.
